Foodservice environments are among the most technically complex spaces within a building, yet they have a profound impact on the guest experience, operational success, and overall design narrative. This session explores how architects, interior designers, and foodservice consultants can work collaboratively from the earliest stages of planning to create hospitality, retail, and dining environments that seamlessly balance aesthetics, functionality, accessibility, and operational efficiency. Participants will gain a foundational understanding of foodservice programming, space planning, bar design, front-of-house concepts, and the critical building systems that support them.

Through real-world examples and practical design strategies, attendees will learn how to effectively allocate space for back-of-house operations, design efficient and engaging bar and service environments, incorporate open kitchens and retail food concepts, and understand the implications of ventilation, refrigeration, and beverage systems on the built environment. By bridging the gap between technical requirements and design intent, this course equips design professionals with the knowledge needed to create foodservice spaces that are both highly functional and thoughtfully integrated into the overall architectural vision.

Biography

Ken has spent his career in the hospitality foodservice industry, building on a family legacy that began in Tampa in 1987. He studied accounting, architecture, and economics, integrating his education with extensive industry experience to establish SSA in 1987. The firm was founded to address the need for innovative hospitality foodservice design and strategic consulting. In 1999, Ken further expanded his vision with the creation of Studio F/S, a creative studio enclave dedicated to enhancing guest experience through thoughtful design. SSA’s Studio F/S was selected as one of the coolest workplaces in Tampa Bay.

Ken brings decades of global experience in the design and development of commercial and institutional foodservice projects of varying scale, from individual restaurant concepts to large scale resort developments exceeding $2.45 billion in value. Over more than thirty years, he has served as principal designer and development coordinator for foodservice projects involving leading global brands and acclaimed culinary professionals such as Four Seasons, Ritz Carlton, Microsoft, Hard Rock International (hotels and casinos), Pepsi, Hilton, Marriott, Union Square Hospitality Group, Dean & Deluca and for such celebrity clients as Danny Meyer, Daniel Boulud, John Fraser, Emeril Lagasse, Scott Conant, Michael Mina as well as numerous others. 

Ken is a professional member of the Foodservice Consultants Society International. Additionally, Ken and SSA have received numerous industry recognitions and awards, including Ken’s selection as one of the world’s top twelve foodservice consultants.

Biography

Lisa is an award-winning architectural lighting designer passionate about creating spaces that support wellness. She has led lighting projects for corporate offices, universities, hotels, residences, and civic institutions across the country, working in both specialized lighting studios and multidisciplinary design environments. She currently leads the Colorado office for AKLD Lighting Design, a Chicago-based, woman-owned architectural lighting design firm. Recognized as a thought leader in the lighting industry, Lisa translates emerging research on light and human health into practical design solutions. Her work demonstrates how evidence-based lighting strategies can enhance occupant wellbeing and performance. Lisa holds architecture and interior design licenses, along with EDAC, LEED, and Certified Lighting Designer (CLD) credentials. She is a professional member of the International Association of Lighting Designers (IALD). She has presented at MED Talks, IESNA, LightFair, and Environments for Aging, participated in the National Institutes of Health's Health in Buildings Roundtable, delivered keynote addresses on lighting and health, and was featured in the documentary LD2020: A Story About Lighting Design.

Biography

Cherise is the Senior Spec Writer for RDH Building Science Inc. for all US and Canadian offices. She is based in the Portland, Oregon office.

Cherise has experience with many facets of the project team in the built environment.  She has worked mostly in architecture but also in Construction, MEP Engineering, and now Building Science.

She is a Construction Specifications Institute Fellow, recent recipient of the Hans William Meier Award for Innovation of Certification Programs and the Frank Stanton Memorial Award. She has held many leadership positions in CSI including Past President and current Certification Chair of Portland CSI and former Director-at-Large on the Institute Board.

She currently teaches the 12-week CDT Certification education program twice a year and has had over 1,000 students in the last 13 years.

Cherise is passionate about mentorship/young professional development, public speaking/education (500+ speaking engagements), and is particularly interested in improving project coordination and communication among all disciplines.

Her latest adventure is as the host of the ARCAT DETAILED Podcast - project stories of challenges and triumph! www.arcat.com/podcast. The podcast was named #2 on Feedspots list of Top 100 Architecture Podcasts on the Planet and recently surpassed 1.1 million downloads.

Ara Nenninger brings over 22 years of hands-on experience navigating green building certification from the earliest design decisions through final commissioning and ongoing operations. As a LEED AP BD+C ,WELL AP and PMP she has managed certification programs across commercial, multifamily, and institutional projects — developing the fluency in construction documentation, energy modeling integration, and integrative process facilitation that LEED v5 now demands at the prerequisite level.

Ara's work spans both sides of the certification equation: as an active GBCI WELL Reviewer she has evaluated projects for compliance against rapidly evolving health and performance standards, and as a practicing sustainability consultant she guides project teams through the strategic trade-offs that determine whether a building reaches its target rating.
